In Russian and Ukrainian homes the big winter table is New Year's Eve. The classics are salads: Olivier (potatoes, peas, pickles, bologna or chicken, eggs, mayonnaise), Shuba (herring under layers of beet, potato and carrot), and vinegret. Then platters of sliced deli meats and cheeses, pickles and marinated mushrooms, red caviar on buttered bread, and a box of chocolates for midnight.

Orthodox Christmas, January 7
Orthodox Christmas falls on January 7. Christmas Eve, January 6, is the quieter table: the traditional first dish is kutia, a sweet grain porridge with honey, poppy seeds, nuts and dried fruit, and the meal is often meatless. Christmas Day brings the roast, the pirozhki and the sweets.

Old New Year, January 14
Old New Year is New Year's by the Julian calendar, celebrated on the night of January 13 to 14. It is a smaller, family repeat of the New Year's table. In many homes the dish of the night is vareniki, sometimes with a surprise folded into one of them for luck.
We keep frozen vareniki and pelmeni year round, with sour cream and butter to finish them.

Maslenitsa is a week of blini before the Lenten fast. Blini with butter, sour cream, jam, condensed milk, honey, or red caviar; savory ones with smoked fish or tvorog.

Orthodox Easter (Paskha)
Orthodox Easter is the spring table: kulich, the tall sweet bread with icing; paskha, the molded sweet tvorog; and painted eggs. The greeting is 'Christ is risen' and the answer is 'Truly He is risen'.
Paska kulich breads, plain and tvorozhnaya (curd), arrive in the weeks before Easter and appear in the Bread and Bakery collection while they last. Tvorog for paskha is in dairy year round. Sold out below means out of season; call to ask when they land.
